Today I am going to show you how to prepare and grill a full chicken in your barbecue.
Frist, I will explain to you how to marinate your chicken, then we are going to prepare n amazing sauce and finally we are going to prepare the best garnish that you ever tried. Let’s go.
All the Ingredients that we are going to need are:
• Black pepper
• Olive oil
• Red onion
• Parmesan chees
• Obviously, a full Chicken
How to prepare the Chicken for Grill
If you are looking to have the best chicken ever then you will have to look first for a good chicken.
How to select a good Chicken
1- Check the “best by” date.
2- Make sure the skin covers full chicken.
3- Go for corn fed Chicken if possible
4- Always free-range Chicken
5- See if there’s blood on cut parts. Blood is no good sign. Could indicate that the meat has been frozen and increases the risk of bacterial contamination.
6- Make sure that smell ok
7- Make sure you get from a trusted butcher.
Once we have the desired chicken the first thing that we are going to do is open the chicken in a “frog style” by doing small cuts between the legs and the breast. If you don’t know how to do it there are few tutorials there that will explain to you step by step how to open a chicken for the grill.
Now, with the knife we are going to separate the skin from the meat as we are going to do a dry marinate. This means that we are going to place all our ingredients between the skin and the meat. This is the perfect way to marinate a chicken, if you marinate the chicken outside, then all our herb will burn and could result in a sour meat taste.
How to prepare the marinate:
Here we are going to need a mortar, if you don’t have it you can also use your chopping board and a good knife.
We will add then 1 spoon of each below ingredients:
• Black pepper
Now we a little gentile tap we start to smash and mix all the ingredients. Once we have all the ingredients smashed we are going to place the mix all over the chicken between the skin and the meat. Once is fully marinated we bring it to grill.
Bake the potatoes directly on the embers
While we are cooking the chicken, we are going to cook the potatoes. Wrap the potatoes on tinfoil and place them right up to the embers. Potatoes will be ready in about 35, 40 minutes approx.
How to Grill the Chicken.
To cook the chicken, we need a medium heat grill as we must cook it slowly. If the barbecue is too hot then we will burn the chicken outside and will be not cooked inside.
Place the chicken in the grill (on the flat part) and leave it for 10 min. Then we will remove the embers that are right below the chicken and we will close the barbecue lid. We are going to cook the chicken very slowly for about 35 or 40 min but we are going to add lemon every 15 minutes.
After 35, 40 minutes we will open the lid and we will turn the chicken to brown the skin and get a perfect crispy chicken outside and tender inside. Remove the potatoes that should be ready by then.
While our skin is getting golden brown, we are going to cut the potatoes on slices. Do not remove the potatoes skin.
Now we are going to prepare our potato side dish. In a saucepan with small amount of butter we are going to add the red onion finely cut and the spinach. Cook it for about 5 min.
Once cooked we are going to need an iron skillet pan. Paint the pan with butter and add a few potatoes slices to cover the pan and on top add the mix of spinach and onions, salt and pepper.
Then we add another base of potatoes, salt, pepper and again 1 big spoon of spinach and onions. Once the pan is full we add a drop of milk and on the top the chees.
Once all is done place the pan on the grill and close the lid. We are looking to get the chess gratin. This will take about 10 or 15 min. Meanwhile we are going to prepare the sauce.
How to prepare the sauce.
Now we are going to use again the mortar. Add 2 garlic cloves, salt, nuts, basil and smash all together. Once is smashed add, avocado, salt, peer and a drizzle of olive oil. Mix with wood spoon and finally add lemon, continue mixing until you get a nice consistence.
By now the chicken and the potatoes should be ready. Remove it from grill and you are done. Add the sauce to the meat and enjoy this delicious chicken grilled.
